8 pix: Take a first look at York’s newest sandwich shop

New sandwich shop Salt Pig is set to open in York tomorrow (Friday).

We reported earlier this month that Salt Pig was preparing to launch at 39 Fossgate, in what was previously home to the Hairy Fig Deli. Now, sandwich enthusiasts can rejoice as the new venture is set to open its doors Friday 31 October at 12pm.

YorkMix spoke with owner Tim Jervis to find out more about Fossgate’s latest eatery.

Salt Pig will open at 39 Fossgate, in what was the Hairy Fig Deli.

Ahead of the opening tomorrow, Tim said he’s feeling “terrified. But it’s coming together. I feel like there’s still a million things to do, but I don’t think that goes away.”

Visitors to Salt Pig should expect “really good sandwiches. I’m opening a shop to work in and to run, so I want it to be a nice vibe.

“I want it to be a place that I look forward to coming every day, and hopefully that will be reflected for other people wanting to come and visit.”

Cooking is a new career change for Tim, who has previously worked in hospitality and construction. “Cooking was always the thing I did for fun and not for work.

“There’s that fear that when you turn your passion and your hobby into your job, that you don’t like it anymore. But it’s turning a passion and a hobby into something that I can do for a living, and hopefully share the love a little bit – and that people will like it!”

With the opening of Salt Pig, Tim hopes to “build a little lunchtime community, people who come and want to eat the food and take it away and sit and have a chin wag.

It’s already recieved a positive reaction so far, from bellow businesses on the street and passerby. “People on the street are already so friendly and so nice, it’s got a real good feel to it.”

Tim is passionate about making the humble sandwich “sexy” again. “This style of sandwich is of Italian descent – it’s not a new concept, it’s famous from a place that started in Tuscany.

“It’s a format I love – if I want a sandwich, this is the kind of sandwich I want. We’re going to try and do the best version of that that we can.”

The sandwiches will be made using Schiacciata bread – an Italian bread similar to focaccia, which will be baked fresh in-house.

The made-to-order sandwiches will include filling combinations like mortadella with pistachio cream, nduja with salami and hot honey, and coppa (Italian cured meat) with Gorgonzola, rocket and walnuts – as well as vegetarian and vegan options.

Hot fillings are in the works for the future, with Tim teasing tasty ideas like crispy pork belly, pickled vegetables, and beef rendang.

Sandwiches will be between £5-£10, depending on the size.

Coffee will also be available, supplied by York coffee roaster Harmony, and soft drinks. Pastries will also be added to the menu in the near future too “for the morning crowd. I’m also toying with the idea of doing crumpets in the morning.”

The sandwich shop will be mostly takeaway, with a few bar seats inside.

Salt Pig is soft launching this weekend, and will be open from 12pm to 3pm. It’ll then close for a couple of days and officially launch on Wednesday 5 November, which will then be open seven days a week from 8am to 3:30pm.
