York Cocoa House has some interesting ideas on the chocolate cooking front. Who needs Jamie Oliver when you can ignite your taste buds with your very own chocolate chilli? Try out your culinary skills with this racy new recipe.
Chocolate and Vegetable Chilli
Ingredients:
1 large white onion
2 Red or Yellow Peppers
1 bulb of garlic
800g of tinned, chopped tomatoes
2 large tablespoons of Chilli Jam Man Chocolate Orange Chilli Jam
400g tin of kidney beans
400g tin of mixed beans
40g of 70% dark chocolate
A little olive oil for frying or 20g of cocoa butter
Salt and pepper to taste
Method
Finely dice the onion and chop the peppers into small cubes. Crush the garlic and set to one side.
In a large saucepan gently fry the onion and peppers in a little oil or cocoa butter until the onions are soft.
Add the garlic and cook for a further minute but be careful this does not burn.
Add the tomatoes and stir thoroughly, allow this to simmer and reduce for about 15 minutes.
Add the beans and chilli jam and leave to cook on a low heat for a further 20 minutes with the lid on the pan.
Stir in the chocolate and add salt and pepper to taste and a little bit more chilli jam if you want a spicier flavour.

Using cocoa butter creates a really rich feel to make it taste meaty and the chocolate softens the spiciness but allows the flavour to come through rather than just the heat.
